Succotash recipe
Summer season Succotash
Ingredients
4 ears corn, shucked
2 tablespoons added-virgin olive oil
one cup diced Spanish onion
one clove garlic, minced
2 cups fresh or defrosted frozen lima beans
two cups diced heirloom tomatoes
one one/2 tablespoons butter, at area temperature
1 1/two tablespoons mayonnaise
Juice of 1 lime
Kosher salt and freshly ground black pepper
two tablespoons fresh basil, cut into chiffonade
2 tablespoons grated Pecorino-Romano cheese
one tablespoon fresh cilantro, chopped
1 tablespoon fresh mint, lower into chiffonade
