Chicken Vesuvio Recipe
Chicken Vesuvio is typically served in a mound on a platter with roasted potatoes, piled to mimic a volcano in eruption (hence Mt. Vesuvius). Roasted with a variety of herbs and garlic the chicken creates its personal scrumptious juices in the course of roasting.
- one three-4 lb Chicken minimize-up, with skin
- three-4 T Chicken Vesuvio Seasoning
- three Medium Potatoes sliced into 1/6 wedges
- cup olive oil
Optional:
Wash and pat chicken pieces dry.
Pour olive oil in bottom of roasting pan, incorporating fresh garlic if wanted.
Sprinkle or spread spice blend onto skin side of chicken pieces.
Place chicken, skin side down into roasting pan.
Finish sprinkling seasoning more than top of chicken pieces. Cover and bake in 375 oven for 75 minutes. After 30 minutes flip chicken.
Add potatoes, turning to coat in pan juices. Sprinkle additional CV seasoning above potatoes.
To give chicken a golden baked color, uncover during last twenty- 30 minutes. Broil for five minutes if desired.
Serve with pan juices (1 of the greatest components!)
