Homemade Chicken Croquettes

Melanie’s a superb cook and she sure understands how to place smiles on her family’s faces when she rustles up her homemade chicken croquettes!


So let’s see how Melanie makes her delicious recipe.

Prep Time: five minutes plus one/2 hr chill time


Cook Time: five – ten minutes


Yield: serves 4


Ingredients


3TBS shortening / butter
one/3 cup / 20 g flour
1 tsp salt
1 cup /235 ml milk
2 cups /380 g chopped cooked chicken
one TBS minced onion
2 TBS minced parsley
2 eggs
two TBS lemon juice
one/3 cup / forty g fine dry bread crumbs
Please note, the darker croquettes you see in the photograph use chipotle breadcrumbs


Instructions:


one. In a pan, Melt shortening, mix in flour and salt.
two. Include milk. Cook minimal, stir continually till smooth and thickened.
3. Include chicken, onion and parsley. Spread in greased shallow pan.
four. Chill totally. Form into 8 logs. (Peggy has manufactured balls as an alternative of logs in her photographs)
five. In a bowl, beat eggs and lemon juice lightly with fork.
six. Dip logs into egg mixture, then coat with crumbs.
Heat deep unwanted fat to 365 F / 190 C /Gasoline five, fry croquettes about five minutes or until golden brown. *** You can also bake these in the oven, spray with some oil and bake at the above temperature until finally golden brown.
Drain on paper towels.


Serve as an appetizer or entree, with your preferred sauce or my personal favored, along side a salad with a creamy dressing like ranch or cilantro lime.
